Life sized dreams come true

            With a little urging from her good friend Barbara Phillips, cake designer Nikki Jackson of Absolutely Edible in Rowlett shared these photos with neighborsgo.com. Jackson and her staff created a wedding cake to look like the bride.

            Chidi and Inocent Ogbuta, originally from Africa, were married Sept. 22 in Dallas. Jackson reports that both the bride and groom were “absolutely pleased with the results” of the cake’s likeness.

            “The cake served 550-600 people,” Jackson said. She added that the beautiful bride likely weighed less than the cake, which was nearly life-sized.

            Phillips, who initially contacted neighborsgo about the bride-cake, wanted to recognize her friend Jackson for designing such creatively tasteful masterpieces, many of which can be seen in the window of Absolutely Edible at

5213 Rowlett Road
. According to Phillips, Jackson has never taken any formal cake decorating classes.

            To create the head, Jackson worked with a sculptor, Elizabeth Bonura. “Although if given enough time, I could have done the head out of cake,” Jackson said.
